Creamy Salted Egg Chicken

Chicken Thigh Marinade
Boneless Chicken Thigh, cubes | 60g |
Whole Egg | 0.1pcs |
Rice Flour | 3g |
KNORR Chicken Seasoning Powder 1kg | 1g |
Salted Egg Paste
Water | 2ml |
KNORR Golden Salted Egg Powder 800g | 7.5g |
Before Serving
Chilli Padi, sliced | 0.6g |
Curry Leaves | 0.6g |
Evaporated Milk | 10ml |
Sugar | 0.3g |
PLANTA Margarine 2.75kg | 7.5g |
KNORR Chicken Seasoning Powder 1kg | 0.3g |
Preparation
Chicken Thigh Marinade
1. Marinate chicken thigh cubes with Chicken Seasoning Powder and egg in a mixing bowl.
2. Chill in chiller for 2hrs before use.
Before Serving
1. Coat chicken cubes with rice flour and deep fry it in wok with hot oil till golden brown.
2. Strain and drain off oil, set aside.
3. Melt margarine in heated wok, add in curry leaves and chilli padi.
4. Add in pre-mix salted egg paste.
5. Stir fry on low flame till mixture is foamy.
6. Add in evaporated milk, chicken powder and sugar.
7. Bring to a simmer stage.
8. Add in crispy chicken cubes and toss well in wok.
9. Transfer creamy salted egg chicken to plate.
10. Ready to serve.
